Turkey Medallions with Honey Chipotle Sauce

Potato Medley

2 cups sweet potatoes, diced

1 1/2 cups Yukon gold potatoes, diced

2 teaspoons extra-virgin olive oil

1/4 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

1/2 teaspoon granulated garlic

Sautéed Kale

1 bunch fresh kale

2 tablespoons shallots, sliced

1 teaspoon extra-virgin olive oil

2 tablespoons water

1/2 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

2 tablespoons cider vinegar

Turkey Medallions

1 pound boneless, skinless turkey breast tenderloins

1/4 teaspoon sea salt

1/2 teaspoon extra-virgin olive oil

1/4 teaspoon freshly ground black pepper

Honey Chipotle Sauce

2 tablespoons softened unsalted butter

2 tablespoons honey

2 tablespoons warm water

1/4 teaspoon sea salt

1/4 teaspoon chipotle powder

In a small bowl mix all ingredients until combined. Set aside. The mixture will be slightly chunky.
