Try this healthy and savory quinoa salad full of easy-to-find organic ingredients.

Ingredients
1 cup quinoa
1-½ cups water
Sea salt
2 tablespoons virgin coconut oil
2 large zucchini, diced
1 large garlic clove, minced
6 chives, thinly sliced
4 tablespoons toasted walnuts, chopped
Juice of 1 large lemon
1 teaspoon fresh lemon zest
1/3 cup finely chopped fresh mint
Sea salt and pepper, to taste
- Cook quinoa in the water in a small saucepan over medium heat. Add a pinch of sea salt and bring to a boil, then simmer until tender and all water is absorbed, about 15 minutes. Remove from heat, fluff with a fork and set aside.
- In a large skillet, heat coconut oil and cook zucchini until tender, about 10 minutes. Add garlic and cook for another minute. Season to taste with salt and pepper.
- In a large bowl, combine cooked quinoa with zucchini mixture, chives, walnuts, lemon juice, lemon zest, fresh mint, sea salt and pepper. Toss to combine and serve.
