Organic Cocktail Party!

IMG_2896The last licks of summer are upon us, and the end–Labor Day Weekend–lurks right around the corner. Before it’s time to pack up the tent and shift into Back-to-School mode, here are a couple of refreshing organic summer cocktails that will leave the lingering taste of summer in your mouth.

I met Zachary Moore, bartender at Rouge Tomate, at a dinner at the Andaz Wall Street in New York City. We discussed organic spirits while enjoying FAIR Fair-Trade Certified cocktails, and I asked Zach to share this delicious cocktail with us.

 

Rouge Tomate Green Island cocktail and Fair VodkaGreen Island

1 1/2 oz Mango infused FAIR Vodka
2 oz Fennel Basil juice
3/4 oz lime juice
1 oz lavender honey syrup
Passion fruit foam (optional)

 

Mango infused vodka: Cut one whole mango into pieces and place in a large container with one liter of vodka. Let sit for 8 hours or more (to taste) then strain out mango.

Fennel-basil juice: For every 1 cup of fennel juice blend with 4 leaves of basil for color and to balance the anise flavor from the fennel.

Lavender-honey syrup: In a 1 to 1 ratio mix lavender honey with hot water until you get the consistency of a syrup. This should store for at least two weeks in refrigerator.

Passion fruit foam: Place 24 oz of passion fruit juice or puree into an Isi Cream Canister. Use 2 NO2 cartridges and shake. This should be good for up to two weeks in refrigerator.

Place all ingredients into glass, shake with ice. Strain over fresh ice into a glass and finish with passion fruit foam on top.

2 oz Prairie Organic Gin
1 oz lemon juice, freshly squeezed
1 oz lime juice, freshly squeezed
1⁄2 oz simple syrup
Splash of club soda
Handful of mint

 

Muddle mint in shaker. Add gin, lemon juice, lime juice and simple syrup with ice, shake. Keep shaking, then strain into a highball glass and top with a splash of club soda. Garnish with a sprig of mint.
