Refreshing Honey Ginger Lemonade

Summer in the city is the time to gather with friends on a rooftop or terrace and share a refreshing cocktail while you watch the sun go down. If you are in the country, your mindset will shift to someone’s backyard. But wherever you are, you’ll want to enjoy something refreshing to drink, with the tinkle of ice in your glass, preferably garnished with a fresh sprig of mint or perhaps an unexpected herb like thyme.

Aside from having someone follow you around with a fan, nothing is more refreshing than lemonade. We tried this Honey Ginger Lemonade Cocktail recipe from our friends at Catskill Provisions NY--a woman-owned, artisanal fine food and craft spirits company in upstate New York, in the Catskill Mountains--and can’t get enough. Fortunately, there is a nonalcoholic version!

Catskill Provisions NY founder, Claire Marin, is committed to saving the bees. She tends over 300 beehives in Delaware, Sullivan, and Madison Counties, in partnership with other local, rural beekeepers to create small batch, hand-packed honey harvested several times a year. Catskill Provisions NY infuses that honey into Apple Cider Vinegar, Chocolate Honey Truffles, Rye Whiskey, the most delicious ketchup on the planet (and this, from someone who really doesn’t like ketchup!) and more. The raw wildflower honey is also available on its own.

Here are both versions of your new favorite drink.

Honey Ginger Lemonade Mocktail

3 ounces fresh ginger, unpeeled

Fresh sprigs of thyme

3 cups water

1/3 cup raw honey (Catskill Provisions NY, or other local honey)

1 cup lemon juice, freshly squeezed

1. Cut the ginger into thin slices (no need to peel). In a small saucepan, bring the water, honey, 2 sprigs of thyme, and ginger to a boil.

2. Remove from heat and cover. Steep for 30 minutes to 1 hour.

3. Strain the ginger and thyme pieces from the syrup and mix the ginger-infused syrup with the fresh lemon juice in a pitcher. Chill.

Honey Whiskey Ginger Lemonade Cocktail

2 oz Catskill Provisions NY Honey Rye Whiskey

6 oz Ginger Lemonade

1. Fill a tall glass with ice. Pour in the whiskey first and then fill with the fresh lemonade.

2. Throw in a few slices of lemon and give it a good stir, garnish with a sprig of thyme and serve.
