San Francisco cookbook author and recipe developer, Amy Sherman, sent us this amazing summer recipe from her next book. Movie popcorn can be loaded with fat – around 1,000 calories per serving – but Sherman’s version adds caramel and healthy nuts to satisfy a sweet tooth.
Sherman says, “Sometimes the best recipes are happy accidents. I was trying to make a snack bar but over-toasted a mix of honey, sugar, peanut butter and popcorn. The result? Crunchy summer popcorn mix that is positively addictive.”
Amy Sherman’s Popcorn Crunch
1/4 sugar
1/4 cup honey
1/4 cup natural and organic peanut butter
4 cups popcorn
Cook sugar and honey until sugar dissolves about 3 minutes. Add peanut butter, one tablespoon at a time, to prevent it from clumping together. Cook another 2 minutes then stir and cook another 2 minutes. Add popcorn dispersing it evenly. Cook for 3 minutes then transfer to a greased sheet pan to cool. Enjoy!
