Blueberry Ginger Mojito

from Miraval Resort

1 cup blueberries

1 oz sliced ginger

10 mint leaves

Juice of 3 limes

8 oz white rum

6 oz honey syrup

2 oz champagne

With a muddler, smash the blackberries, ginger and mint in a cocktail shaker. Add the lime juice, rum and honey syrup and shake with ice then pour over more crushed iced.

Chef's Tip: Do not over muddle; this will make the herbs bitter.
