At the Gwinganna Lifestyle Resort in southeast Queensland, Australia, you will find mindfulness infused into everything: the design and decor of the stunning new Meditation Suites, the re-balancing treatments at the award-winning spa, the organic garden that provides many of the delicious ingredients on the spa and culinary menus.
Mindful eating is also a cornerstone of the program. Taking slow bites and savoring your food. Putting your fork down while chewing your food. Thinking about what you are eating and being grateful for the way it nourishes your mind, body and soul. And, if you end up losing weight while you gain consciousness about eating a healthy, nutritious diet, don’t be surprised!
These Coconut Lime Bites are not only easy to prepare, they are a sure crowd-pleaser.
Mindful Eating: Coconut Lime Bites
Recipe from Gwinganna Lifestyle Retreat
3 cups desiccated coconut
1 cup raw cashews
pinch of sea salt
3 limes, juice and zest
2 tablespoons raw honey
Blend coconut, cashews and salt in a food processor for three minutes. Add lime juice, zest and honey, and process, scraping down sides as needed. Process until mix comes together and forms a dough like ball. Roll into walnut sized balls. Store in refrigerator, but take out 10 minutes before serving.
NOTE: These can be rolled in desiccated coconut. You can substitute maple syrup for honey if needed.
