Strawberry Custard Recipe

The New York City- based startup, GreenBlender, delivers pre-portioned ingredients and perfectly packaged superfoods to make organic smoothies at home, shared this fantastic recipe for Strawberry Custard in celebration of National Strawberry Month, and just in time for Memorial Day weekend.

The healthy combination of sweet strawberries (vitamin C, iodine, manganese), creamy squash (magnesium, fiber, folate) and cashews (vitamins E, K and B6), and the “topping” of anti-inflammatory cinnamon, iron heavy goji berries and heart-healthy oats will call to mind a delicious dessert—that you can have first thing in the morning!

Ingredients

1 yellow squash

3 ounces strawberries

3 tablespoons cashews

3 tablespoons oats

1 teaspoon cinnamon

2 tablespoons goji berries

1 cup rice milk

1 cup ice

Directions

Chop the squash into large pieces.

Combine all ingredients into the blender (strawberries can be whole if organic—greens and all for added nutrition and no waste!)

For best consistency blend ingredients for 1—2 minutes depending on the blender and then add the ice and blend for another 15 seconds
