Foodies are avidly following this chef, who at 27 years of age, earned a Michelin star for Ubuntu in the 2011 guide. Chef Aaron London, named a 2011 Rising Star Chef by the San Francisco Chronicle, is (as of this printing) a finalist for the 2011 James Beard Foundation Award for Rising Star Chef. Specializing in farm-to-table vegetable cuisine, using the freshest organic grains and produce from local purveyors and the restaurant’s own biodynamic garden, London creates seasonal dishes that keep patrons coming back for more—the Spring Onion Jam Doughnut, stuffed with cool burrata, crispy fried shallots, foraged green salad, and agretti and the Organic Grits from Arbuckle with bordelaise with trumpet mushrooms, black trumpet caviar, “ruby steak” mustard, and goat’s milk ricotta—to name a few. The wine list is made up of local biodynamic and organic producers, while the decor (it’s located in an historic 19th Century building) deserves special kudos for it sustainability details. Napa-area artisans handcrafted reclaimed wood into beautiful flooring and furnishings for the dining room and patio. The communal dining table, shown here, is the focal point and was crafted from windfall trees.
