Fairmont and Farmers

by Organic Spa Magazine

In a new program designed to connect guests with locally sourced food, The Fairmont San Francisco and The Fairmont Sonoma Mission Inn are purchasing student-raised hogs from the Sonoma Valley High School Agriculture Department for the hotels’ signature restaurants, cafes and employee cafeterias.

“Sustainability as a culinary theme is paramount in our kitchens,” says Chef jW Foster of the Fairmont San Francisco. “We are continually seeking out locally sourced proteins and produce, supporting local economies and reducing food miles. This partnership with Sonoma Valley High School is a win-win.”

“By supporting Sonoma Valley High School and the area’s primary business (agriculture/wine grape growers), we hope to truly elevate the importance of buying local and supporting the community,” says Fairmont spokesperson Michelle Heston. www.fairmont.com
