Elegant Cilantro and Pepper Salad

FOOD FOR THOUGHT – August

This is a light and lovely cilantro and pepper salad recipe could be meal in itself or an appetizer salad before a substantial lunch.

2 fresh organic red peppers
2 fresh organic yellow peppers
2 fresh organic orange peppers
1 large bunch organic cilantro
1 container feta cheese
1 container pine nuts
3 Tbsp Grapeseed oil –organic, cold-processed only

Cut into strips 2 red peppers, 2 yellow peppers, and 2 orange peppers and arrange colorfully on an oval dish.  Pull the leaflets from a bunch of Cilantro and mix generously throughout the strips.  Sprinkle original feta cheese throughout the Cilantro and pepper strips.  Next, drop pine nuts throughout.  Finally, drizzle Grapeseed oil over the entire salad mixture and serve.

Benefits: The sweet peppers richly supply carotenoids-including lutein and zeaxanthin, vitamin C and sulfur as well as fat-soluble vitamins A and E.  They are an excellent source of vitamin B6 and a good source of manganese.  Peppers are reportedly great for improving night vision. Animal and lab studies have shown red, yellow and orange peppers to have anti-cancer properties, especially for reducing the risk of gastric and esophageal cancers.  Red peppers are the richest in lycopene and may be useful in lowering the risk of lung cancer and prostate cancer. They provide antioxidant and anti-inflammatory phytonutrients.

Pine nuts are heart-healthy and beneficial for supporting healthy cholesterol levels as they are a source of monounsaturated fats. Because they are high in antioxidants and copper, they successfully slow down the aging process. Rich in protein and magnesium, they increase energy by countering fatigue. Like peppers they contain the eye healthy nutrients lutein and beta carotene.

Feta Cheese is a good source of protein, age slowing riboflavin, and calcium. It’s also good as a belly-fat.
